About Feliu Dark Criollo Rioja 73%

Made with Mexican Criollo cacao from Chiapas, this delicious bar stands out for its naturally light ochre color and wonderfully creamy texture. Smooth and delicate on the palate, it offers subtle hazelnut notes, very little bitterness, and a beautifully soft finish. The cacao comes from Finca La Rioja, where this traditional Mexican variety has been carefully preserved and cultivated. A graceful and distinctive chocolate that showcases the naturally delicate side of Mexican cacao.

Feliu

Feliu Chocolate is an exploration of Mexican cacao and its varieties, origins, and aromas, founded by Victor Feliu. They work with cacao farmers, selecting and processing cacao to bring out the best expression and characteristics of the unique origins. Each batch is fine-tuned and adjusted to the variety, harvest, and year.

As a Mexican bean to bar chocolate maker, Feliu works exclusively with Mexican cacao, primarily from Chiapas and Tabasco, purchased directly from the producers, whom they visit regularly. The cocoa beans are processed in their small factory and chocolate shop in Guadalajara, Jalisco.

Cacao region

Chiapas

Chiapas is Mexico's southernmost state and home to deep cacao history spanning over 4,000 years with Mayan and Aztec cultures. The region's indigenous Mayan communities grow native criollo and heirloom varieties including Blanco Jaguar, Uranga, and Forastito in forest systems protected by conservation areas. The diverse microclimates create complex flavor development.

Criollo

Criollo is the only one of those original three which has proven to be its own evolutionarily unique type. The clusters were finally identified in 2008 using hundreds of samples collected throughout the Americas over the previous century. With the least genetic diversity of the ten, criollo cacaos are the most predictable in terms of both appearance and flavor, as well as proper post-harvest protocol; they’re known to have a very chocolaty base flavor and little to no bitterness. Some criollos also show a light nuttiness or florality, but overall they’re prized for their mild flavor, and under-cultivated due to low yield. Criollo is the only genetic cluster found growing wild in the primary forests of Central America.
