NearyNógs is a family-run bean-to-bar chocolate maker on Northern Ireland’s Mourne Coast, crafting small-batch chocolate with a clear focus on origin, flavor, and careful production. Founded in 2011 by Shane and Dorothy Neary, the company hand-sorts, roasts, stone-grinds, ages, and tempers specialty cacao sourced from origins across Central and South America, the Caribbean, West Africa, and Asia. NearyNógs emphasizes single-origin cacao, transparent sourcing, and chocolate that lets each bean’s natural character come through. Their factory now runs on solar power, and the brand also highlights recyclable or biodegradable packaging. The result is distinctive Irish craft chocolate with a strong sense of place and a real commitment to the craft itself.

Cotopaxi is a province in central Ecuador just south of Quito, where cacao grows in the region's most tropical areas alongside coffee and sugarcane. While the majority of Ecuador's cacao production occurs on the coast, Cotopaxi's volcanic soils and temperate-to-tropical zones support diverse agriculture. The province's cacao is part of Ecuador's broader fine-flavor production landscape.

Hacienda Limon

Hacienda Limon is located at the foot of the Andes Mountain Range, between endless plantations of cacao and banana. The climate on the farm is tropical & humid year round, with nutrient-rich volcanic soil thanks to the nearby Cotopaxi Volcano. Owner Samuel von Rütte, together with his wife Anita & four other families, run the 110-hectare plantation, which is dominated by strains of pure nacional arriba cacao varietals. In 2014, one of these varietals was awarded a heirloom cacao designation status, ensuring the protection of variety diversity. No insecticides or fungicides are used on the farm, and only very reduced herbicides (spot application) are ever utilized.
