ChocolarderChocolarder is a small batch chocolate maker in Cornwall, UK. The founder Mike Longman, a former pastry chef has made award winning single origin bars since 2012. Chocolarder believes in the ‘ethical transparency’, which starts right at bean to bar. Longman ensures to build meaningful relationships with the farmers with the direct trade model to make sure farmers are being recognized for their hard work. Chocolarder picks only the finest beans to be produced into the chocolate bars. Chocolarder also believes that less is more with ingredients providing a top quality organic experience with health benefits as well.
Cacao Strain
ChunoChuno happens to be a mixed hybrid, shown to have genetic heritage of roughly one-quarter criollo, one-half amelonado, and one-quarter mixed amongst the other clusters. It also has a relatively small but strong growing region, found growing semi-wild in northern Nicaragua. Chuno is one of just sixteen cacaos to be certified by the Heirloom Cacao Preservation Initiative, an initiative of the Fine Chocolate & Cacao Institute. The HCP identifies ancient & indigenous cacao varietals which hold significant historic, cultural, botanical, geographical, and flavor value for the global industry, which the very fruity chuno cacao does.
I'll admit it. I'd never even heard of gorse flower until I discovered this bar, but being a huge fan of chocolate and flowers, I decided to give it a try. Those who say it tastes like coconut aren't kidding, and I love coconut chocolate. 50% is the perfect percentage to pair this inclusion with. Due to the taste and the *stunning* Chocolarder cacao-bean-and-leaves mould design, I haven't stopped talking about this since I purchased it from Bar and Cocoa (a couple of years ago by now!)

This chocolate bar is a new favorite. I've never heard of Gorse flower before so this bar was a delicious surprise. Sweet, gentle flavors. No tannic after taste.
I love the smell of gorse - it's not something you see in the States. This brings me back to happy times in Scotland. Smooth, and the delectable coconutty scent/flavor of gorse is great in this bar. LOVE IT.
