The beans for this bar come from Maya Mountain Cacao, Ltd., a social enterprise that buys freshly harvested, unfermented cacao from indigenous Mayan smallholder farmers in southern Belize, then gathers the beans at a centralized fermentary in Punta Gorda. By fermenting and drying all the beans in one place, Maya Mountain Cacao carefully controls quality and flavor consistency in their cocoa, allowing them to fetch a high price. This in turn empowers Maya Mountain Cacao to pay farmers extremely well for their beans.

Dandelion ChocolateDandelion is a small batch chocolate maker in San Francisco. Todd and Cameron, the founders have maintained an uncompromising quality with their sourcing, processing, and quality to produce great tasting bars. You'll notice that the majority of their bars are 70% with is done on purpose, so you can taste the unique difference each cacao from different countries have to offer. Both Todd and Cameron were tech geniuses located in Silicon Valley, where they started building their own chocolate equipment in their basement. Right in the middle of the craft chocolate movement starting to take over the country, they decided to tackle the adventure for themselves. Todd and Cameron wanted to produce high quality chocolate bars using only simple ingredients. Today, Dandelion produces over 12,000 bars monthly, and it’s still not enough to meet the demand for this great chocolate maker. Dandelion’s shop also boast wonderful variety of baked goods, hot chocolate and even daily tours of their chocolate factory.
Cacao Region
Toledo, BelizeToledo is the southernmost district of Belize, home to some of the country’s most pristine rainforests, extensive cave networks, coastal lowland plains, and small offshore islands. Punta Gorda, the district capital, hosts a 3-day chocolate festival each May, which has helped build tourist interest in the region. Toledo is home to aroun 30,000 people from a wide range of cultures, including Creole, Mopan & Q'eqchi Maya, the Garifuna, Mennonites, and Mestizos; all of them rely primarily upon agriculture or fishing. Primary crops grown include beans, corn, coffee, yams, and plantains.
Cacao Estate
Maya Mountain CacaoMaya Mountain is arguably one of the most established cacao origins in the world, having been one of the first to very clearly establish its own brand. Started in 2010, MMC put Belizian cacao on the map, as a pioneer in the centralized fermentery social enterprise model. What that boils down to is 350+ farming families in southern Belize selling their wet cacao beans to the MMC team at a transparent premium. Most of these families are Q’eqchi’ and Mopan Maya and have been producing cacao for generations. In 2014, the origin was even awarded an Heirloom Cacao Preservation (HCP) designation, and its versatile and rich flavors attest to the deservedness of that honor. All Maya Mountain Cacao beans are certified organic.

All of Dandelions chocolate bars are delectable... rich in layers of flavor and fine processing. Smooth on the palette without adding cocoa butter. This Madagascar bar has a divine rich fruitiness to it. Even just eating a tiny amount and letting it melt on your tongue, you’ll find the flavors bursting forth.
