Downeast’s Overboard 8% Cider, made from fresh, unfiltered, locally sourced apple juice combined with Goodnow Farm's favorite flavors into one incredible bar. To craft this bar they soaked their directly sourced Zorzal cacao nibs in TWENTY THREE GALLONS of Overboard 8%, so all of the fresh, sweet and tangy apple flavor is in the chocolate. And, since the alcohol evaporates during the drying process this bar is alcohol-free.

Tasting notes: sweet apple, rich dark chocolate, tart apple fudge

Goodnow Farms

Goodnow Farms chocolate is handcrafted in Massachusetts. All the cacao they use is ethically sourced from small farmers and producers that Tom and Monica have met during their travels throughout Mexico, Central and South America. The cacao is carefully stone ground, and conched in small batches. They also press their own cocoa butter for each bar. They admired the concept of single origin bars and capturing the different taste profiles, and uniqueness through each bar. They discovered their love for real craft chocolate after visiting a vintage shop in Los Angeles. Tom and Monica officially created Goodnow Farms in 2016 but have been crafting their creations since 2008. The pair works hard to engage with the communities where they receive their cacao from to ensure farmers are fairly compensated and practice sustainable farming.

Cacao region

Duarte

Duarte is a northern Dominican province producing over two-thirds of the nation's exported cacao, with fertile clay loam soils and lush tropical rainforest. The Cibao Valley region supports fine-flavor production, with specialty cacao from the eastern edge of Duarte earning a denomination of origin in 2012. Öko-Caribe's central fermentation facility anchors quality processing.

Reserva Zorzal

Zorzal Cacao is an agroforestry project of Reserva Zorzal, a thousand-acre private bird sanctuary and 130-acre organic cacao farm in the northern Dominican Republic. Zorzal is actually the Spanish word for “thrush,” referring to the Bicknell’s Thrush, a migratory songbird which spends winters in the tropical forests of the preserve. Reserva Zorzal is even more unique in the world of cacao, as they have set aside seventy percent of the preserve’s land to be forever wild. They’re part of a carbon-offset project with thirteen other landowners, employ local wildlife monitors, and serve as a model for the integration of conservation & sustainable agroforestry. The cocoa trees are shade-grown to promote wildlife habitat and biodiversity, and all Reserva Zorzal cacao is certified organic.
