Marou Chocolate

Marou Chocolat was started by two Frenchmen Samuel Maruta and Vincent Mourou in Saigon. After a camping trip in Vietnam, that left them venturing onto a cacao farm, they were sold on their next adventure, chocolate. They only had minimal everyday kitchen appliances at the time and started testing how to make chocolate in Sam’s kitchen. They work closely with farmers and slow roast the beans in small batches to get the natural flavors from its terroir and let it do all the work. They are the first bean to bar Vietnamese chocolate makers. Their bars captivate flavors from each region they receive their cacao beans from.

Tien Giang, Vietnam

Tien Giang is one of the southernmost provinces of Vietnam, located just south of Ho Chi Minh City in the Mekong Delta region. Within Vietnam, the province is famous for its large and varied agricultural sector, home of the headquarters of several large fruit brands and producer of nearly 1.5 million tons of fruit each year. Tourism is important to the region, but the local government is aiming to look beyond the lush rice paddies to develop the land further over the next decade, exploiting every bit of greenery they can.

Good but the single origins are better

Marou's chocolate is best without inclusions, in my opinion. The kumquat was powdered and mixed in rather than sprinkled on the back, which made a nice smooth bar. Recommend for someone who wants to try something new.

Tangy and sweet

Was not expecting the awesome flavor combination here! Kumquat is a really tart and kind of bitter fruit, but when paired with this chocolate it is amazingly synergistic! The two flavors are really good together! Almost like a chocolate coated sour patch kid (not quite that sour tho). Highly recommend this unique flavor combo, it was really delicious and disappeared fast (even with my mom who wholly dislikes kumquat).
