Valrhona Dulcey 35% is a blond chocolate, sold here as 250g of baking feves. Valrhona calls blond the fourth color of chocolate: Dulcey was discovered when Valrhona chef Frédéric Bau left white chocolate in a bain-marie too long and it turned golden with a sweet, biscuity aroma.
Tasting notes: Buttery and toasty to start, not too sweet, then shortbread with a hint of salt. A light caramelized milk flavor and a smooth, enveloping texture.
Cacao origin: Dulcey is made from caramelized white chocolate.
How to use it: Melts into golden ganache, mousse and glazes, and bakes into golden blondies and cookies. A strong gift for a baker who already has dark and milk chocolate covered.
