Based in Vietnam, Belvie Chocolate is a bean to bar maker that handcrafts their chocolate bars with Belgian techniques. They source cacao from all over Vietnam, then stone grind and produce their chocolate in small batches. Their award winning chocolate also contributes to the preservation of cacao trees in Vietnam. They take the husks of the cacao as fertilizer for the trees to help maintain a green environment. Belvie uses Trinitario cacao beans only from local farmers to help restore cacao trees throughout Vietnam and mostly importantly, to help support the farmers.

Tien Giang

Tien Giang is Vietnam's southernmost province in the Mekong Delta and the birthplace of Vietnamese cacao. Located just south of Ho Chi Minh City, it has developed into a serious fine-flavor source in the past 15 years. The cacao is full-bodied with notes of spice, brown fruit, and honey, attracting premium chocolate makers like Marou and Belvie.

Probably my favorite Belvie bar. Trancendental, like tasting golden light. (I am aware how high that makes me sound.) Mellow medicinal - almost mint-like aroma. Rich, glossy, fluid texture. The subtlest fruit and toasted nut supporting a ridiculously stunning honey flavor with a lingering and nuanced herbal aftertaste.

Nice sweet complex flavor

The first taste I had this was FANTASTIC. Quickly leaping to the top of my favorite chocolate bar list. It has a nice sweetness to it with a burst of fruit and no earthyness. The second time I tried it, it was still delicious, but not as fantastic. I am hoping this is because I had just had some chicken with onions, likely throwing off the flavor palette, but TBD until I try it a third time. I definitely recommend savoring this bar with small bites that you take the time to have melt on your tongue to get the full experience.

Sun Dried Raisins!

If you enjoy a light, smooth, bar that has a notable raisin flavor (it was like they melted them into it). This bar is incredible!

I do consider myself an 80-90% Dark guy, but I'm finding more 70 range bars like this making me a believer. I'll update the review as I order more to eat. Price point and generous pour is incredible as well, looking forward to more bars from this company!
