The cocoa for this chocolate comes from a single plantation: Bellavista, which belongs to a friend of Qantu's, Don Máximo. A true cocoa aficionado and collector of varieties with unique peculiarities, Máximo ferments and dries the cocoa beans himself, experimenting with different methods. Máximo has Qantu's complete admiration for his commitment to growing cocoa and preserving pure and rare varieties.

QantuQantu is a chocolate maker based in Montreal. Qantu was started by Elfi and Maxime in 2016. This pair fell in love with bean to bar chocolate after researching cocoa after their first plantation visit in 2014. The immense passion and pride of the cocoa producers inspired them to create bean to bar chocolate. Qantu focuses on Peruvian cacao for the moment, which is where Maxime and Elfi met over a decade ago in Elfi’s home country. The name “ Qantu” (pronounced “Kantu”) derives from the name of the national flower of Peru and Bolivia. The word comes from the native language of the Peruvian Andes, Quechua, it represents a symbol of unity and hospitality.

This bar has excellent texture (though it's fairly tannic), with nice woody flavors that are interrupted with bold tart notes. Would recommend.
I was really looking forward to this 80% from Qantu because their 70% was excellent. But I find this one has a bit of an unusual taste, seems less chocolatey, and somewhat acidic. Maybe that is the "cedar" note that the label refers to? It melts smoothly, but with a few small grains.
