Loveday Distillery, in Falmouth use delicious organic oak smoked figs to flavour their spiced rum. They carefully source organic dried figs, before waiting for a dry day to smoke them with oak just up the road from our factory at their distillery. The figs are then soaked in the rum for at least 2 weeks. With sustainability in mind, Daisy got in touch as she knew it was such a shame to see these figs go to waste, we jumped at the chance. The first process Chocolarder does is to remove moisture and alcohol from the figs. They gently dry the figs, and then break them down before pairing them with 50% Milk Chocolate from Oko Caribe in the Dominican Republic. This is a story, about food waste, generosity and working together. The food system is broken, and Chocolarder is doing their part to help fix it—one delicious bar at a time.

Chocolarder is a small batch chocolate maker in Cornwall, UK. The founder Mike Longman, a former pastry chef has made award winning single origin bars since 2012. Chocolarder believes in the ‘ethical transparency’, which starts right at bean to bar. Longman ensures to build meaningful relationships with the farmers with the direct trade model to make sure farmers are being recognized for their hard work. Chocolarder picks only the finest beans to be produced into the chocolate bars. Duarte is a northern Dominican province producing over two-thirds of the nation's exported cacao, with fertile clay loam soils and lush tropical rainforest. The Cibao Valley region supports fine-flavor production, with specialty cacao from the eastern edge of Duarte earning a denomination of origin in 2012. Öko-Caribe's central fermentation facility anchors quality processing.

Öko-Caribe

Öko Caribe is one of several organic cacao cooperatives in the Dominican Republic, but has managed to distinguish itself thanks to consistent high quality beans and very close relationships with all of its 165 farmers. The co-founders maintain these relationships through regular technical training in agronomic practices and organic certification, as well as interactions on a personal level in the community. Their award-winning beans are centrally-fermented in wooden boxes, and depending on the bent of the maker, chocolate made with Öko Caribe cacao could be sweet, spiced, or even fruity. All Öko-Caribe cacao is certified organic.
